Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts (about 6 oz each)
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon olive oil
For the Pesto Sauce:
- 1/2 cup fresh basil leaves
- 1/4 cup grated Parmesan cheese
- 1/4 cup pine nuts
- 1 garlic clove
- 1/3 cup extra virgin olive oil
- Salt and pepper, to taste
For the Topping:
- 1 cup shredded mozzarella cheese
- Optional: cherry tomatoes for garnish
Instructions
- Prepare the Pesto: In a food processor, combine fresh basil leaves, grated Parmesan, pine nuts, and garlic. Pulse until finely chopped, then slowly add olive oil while processing until smooth. Season with salt and pepper to taste and set aside.
- Preheat Oven and Prepare Chicken: Preheat your oven to 375°F (190°C). Pat chicken breasts dry, then season both sides with salt and black pepper.
- Sear the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken breasts and sear each side for 2-3 minutes until golden brown.
- Add Pesto and Cheese: Spread a generous layer of prepared pesto evenly over each chicken breast. Then, sprinkle shredded mozzarella cheese on top of the pesto.
- Bake the Chicken: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and lightly golden.
- Serve: Remove from oven and optionally garnish with halved cherry tomatoes. Let the chicken rest for 5 minutes before serving.
