Description

Ingredients

  • 2 cups all-purpose flour
  • 1½ tsp baking powder

  • ½ cup brown sugar, packed
  • 3 large eggs

  • For the glaze (optional):
  • ½ cup powdered sugar
  • 1 tbsp milk or heavy cream
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 10-inch Bundt pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, whisk together granulated sugar, brown sugar, eggs, oil, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in shredded zucchini and chopped pecans until evenly distributed.
  6. Pour the batter into the prepared Bundt pan and smooth the top.
  7. Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10–15 minutes, then transfer it to a wire rack to cool completely.
  9. For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cake and garnish with chopped pecans.
