- 4 chicken breasts
- 1 egg
- 1 tbsp milk
- 1 cup finely chopped pecans
- ½ cup breadcrumbs
- 2 tbsp butter
Blue Cheese Sauce
- ½ cup heavy cream
- ¼ cup crumbled blue cheese
Instructions
- Prepare the coating: In a shallow bowl, beat together the egg and 1 tablespoon of milk to create an egg wash. In another bowl, mix finely chopped pecans with breadcrumbs for the coating mixture.
- Coat the chicken: Dip each chicken breast into the egg wash to fully coat, then press into the pecan-breadcrumb mixture to cover evenly on all sides.
- Pan-sear the chicken: Heat 2 tablespoons of butter in a skillet over medium-high heat. Add the coated chicken breasts and sear for about 5 minutes on each side until golden brown and crispy.
- Finish cooking in the oven: Preheat the oven to 375°F (190°C). Transfer the seared chicken breasts to a baking dish and bake for 10 minutes, or until the internal temperature reaches 165°F and the chicken is cooked through.
- Make the blue cheese sauce: While the chicken bakes, pour heavy cream into a small saucepan and heat over medium heat. Once it begins to simmer, add the crumbled blue cheese and stir until melted and smooth, about 2–3 minutes.
- Serve: Drizzle the warm blue cheese sauce over the cooked pecan-crusted chicken breasts and serve immediately.
