Ingredients
Dry Ingredients
- 2 cups flour
- ¾ cup sugar
- 2 tsp baking powder
- ½ tsp salt
- ½ tsp cinnamon
Wet Ingredients
- ½ cup oil or melted butter
- 2 eggs
- ½ cup milk
Fruit
- 1 cup diced peaches (fresh or canned, drained)
Instructions
- Preheat and prepare pan: Preheat your oven to 350 °F (175 °C) and grease a 9×5-inch loaf pan to prevent sticking.
- Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
- Combine wet ingredients: In a separate bowl, whisk together the oil (or melted butter), eggs, and milk until smooth and blended.
- Combine wet and dry mixtures: Gradually add the wet ingredients into the dry ingredients, stirring gently until just incorporated without overmixing.
- Fold in peaches: Carefully fold the diced peaches into the batter to distribute them evenly without breaking them down.
- Bake the bread: Pour the batter into the prepared loaf pan and bake for 45 to 50 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
- Cool and serve: Allow the peach bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy as a breakfast or tea time treat.
Notes
- Top with a brown sugar streusel for added sweetness and crunch.
- Use fresh or well-drained canned peaches to avoid excess moisture in the bread.
- For extra flavor, add a teaspoon of vanilla extract to the wet ingredients.
- Store leftover bread wrapped tightly in plastic wrap or in an airtight container for up to 3 days.
- This bread freezes well; slice before freezing for easy portions.
