Ingredients
Protein
- 500 g boneless chicken breast, diced
Grains & Dairy
- 1 cup uncooked rice
- 1 cup milk or cream
- ¼ cup grated Parmesan cheese (optional)
Liquids
- 2 cups chicken broth
Oils & Seasonings
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika
Instructions
- Heat Oil and Brown Chicken: Heat olive oil in a large pot over medium heat. Add the diced chicken breast and cook until the pieces are lightly browned on all sides, ensuring they are partially cooked through.
- Sauté Garlic: Add the minced garlic to the pot with the chicken and sauté for about 1 minute until fragrant, taking care not to burn the garlic.
- Add Rice and Broth: Stir in the uncooked rice and pour in the chicken broth. Season with salt, black pepper, and paprika, then bring the mixture to a simmer over medium heat.
- Simmer Covered: Cover the pot with a lid and let it cook for 15 to 18 minutes, or until the rice is tender and has absorbed most of the liquid.
- Add Dairy and Cheese: Stir in the milk or cream and grated Parmesan cheese if using. Continue cooking for another 2 to 3 minutes over low heat, stirring gently, until the mixture is creamy and heated through.
- Serve Warm: Once creamy and fully cooked, remove from heat and serve the one-pot creamy chicken and rice warm for a comforting meal.
Notes
- Stir occasionally during the simmer to prevent rice from sticking to the bottom of the pot.
- Add vegetables such as peas or diced carrots along with the rice to incorporate extra nutrition and color.
- For a richer flavor, use heavy cream instead of milk.
- Parmesan cheese is optional but adds a nice depth of flavor and creaminess.
