Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and cubed
- 4 cups beef broth
- 2 cups milk
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 1 tablespoon olive oil
- Chopped green onions or pickles, for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through. Drain any excess fat.
- Add diced onion and garlic to the pot, and sauté for 2–3 minutes until softened.
- Stir in the potatoes, beef broth, salt, pepper, paprika, and cayenne (if using). Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes are tender.
- Once the potatoes are cooked, stir in the milk and shredded cheddar and mozzarella cheeses. Cook, stirring occasionally, until the cheese is melted and the soup is creamy.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with chopped green onions or pickles if desired.
Notes
- This soup can be made ahead and stored in the fridge for up to 3 days.
- For extra flavor, you can add crumbled beef or a dash of Worcestershire sauce.
- Feel free to substitute the potatoes with cauliflower for a lower-carb version.
