  • 2 cups mixed vegetables (carrots, peas, potatoes)
  • 1 can coconut milk (about 13.5 oz)
  • 1 cup beef broth
  • Salt, to taste


Instructions

  1. Heat the Oil: Warm 1 tablespoon of vegetable oil in a large pot over medium heat until shimmering.
  2. Sauté Onion: Add the chopped onion and cook until softened and translucent, about 5 minutes.
  3. Add Garlic and Spices: Stir in the minced garlic, curry powder, ground cumin, and turmeric; cook for 1-2 minutes until fragrant.
  4. Brown the Beef: Add the beef stew meat to the pot and brown on all sides, about 5-7 minutes, to develop flavor.
  5. Add Vegetables and Liquids: Stir in the mixed vegetables, pour in the coconut milk and beef broth, mixing thoroughly.
  6. Simmer the Curry: Bring the mixture to a gentle simmer, then cover the pot and cook for 45–50 minutes, or until the beef is tender and the flavors have melded.
  7. Season and Serve: Taste and season with salt as needed. Optionally adjust the spice level with chili flakes before serving hot over rice or with flatbread.
