Ingredients
- 1 lb Italian sausage links (mild or hot)
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp red pepper flakes (optional)
- ½ cup crushed tomatoes (or tomato sauce)
- Salt and black pepper, to taste
- Fresh parsley, for garnish

Instructions
- Heat olive oil in a large skillet over medium-high heat. Brown the Italian sausages on all sides, about 5–6 minutes. Remove and set aside.
- In the same pan, add onion and bell peppers. Sauté for 5 minutes until softened.
- Stir in garlic, oregano, basil, and red pepper flakes; cook for 1 minute.
- Add crushed tomatoes, salt, and pepper. Stir well.
- Return sausages to the pan, cover, and simmer for 15–20 minutes until sausages are fully cooked.
- Garnish with fresh parsley before serving.

- Serve over pasta, rice, or with crusty Italian bread.
