Description

One Pan Coconut Lime Chicken is a vibrant and creamy dish made with tender chicken simmered in a coconut milk and lime sauce, all cooked in a single skillet for an easy, flavorful meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 can (14 oz) coconut milk
  • Zest and juice of 1 lime
  • 2 tablespoons soy sauce or coconut aminos
  • 1 tablespoon honey or maple syrup
  • 1/4 cup chopped fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet over medium-high heat, heat olive oil. Sear the chicken breasts for 3–4 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add chopped onion and cook for 2–3 minutes until softened. Add garlic, ground ginger, and red pepper flakes (if using); sauté for 1 minute until fragrant.
  4. Pour in the coconut milk, lime zest, lime juice, soy sauce, and honey. Stir to combine and bring to a gentle simmer.
  5. Return the chicken to the pan. Reduce heat to medium-low and simmer for 10–12 minutes, or until the chicken is fully cooked and the sauce has slightly thickened.
  6. Garnish with fresh cilantro and lime wedges. Serve hot with rice, quinoa, or vegetables, spooning sauce over the top.
