Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon red pepper flakes (optional)
- 1 can (14 oz) coconut milk
- Zest and juice of 1 lime
- 2 tablespoons soy sauce or coconut aminos
- 1 tablespoon honey or maple syrup
- 1/4 cup chopped fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet over medium-high heat, heat olive oil. Sear the chicken breasts for 3–4 minutes per side until golden brown. Remove and set aside.
- In the same skillet, add chopped onion and cook for 2–3 minutes until softened. Add garlic, ground ginger, and red pepper flakes (if using); sauté for 1 minute until fragrant.
- Pour in the coconut milk, lime zest, lime juice, soy sauce, and honey. Stir to combine and bring to a gentle simmer.
- Return the chicken to the pan. Reduce heat to medium-low and simmer for 10–12 minutes, or until the chicken is fully cooked and the sauce has slightly thickened.
- Garnish with fresh cilantro and lime wedges. Serve hot with rice, quinoa, or vegetables, spooning sauce over the top.
