Ingredients

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 2 medium carrots, diced

  • 2 stalks celery, diced

  • 1 medium zucchini, diced

  • 1 cup pumpkin puree (fresh or canned)

  • 1 can (15 oz) white beans (cannellini or great northern beans), drained and rinsed

  • 1 can (14.5 oz) diced tomatoes

  • 4 cups vegetable broth

  • 1 tsp dried thyme

  • 1 tsp ground turmeric

  • 1/2 tsp smoked paprika

  • 1/4 tsp cayenne pepper (optional for heat)

  • Salt and pepper to taste

  • 1-2 cups fresh spinach or kale (optional for added greens)

  • 1 tbsp apple cider vinegar or lemon juice (optional for brightness)

  • Fresh parsley or cilantro for garnish

  • Crusty bread for dipping (optional)

Instructions

  • Sauté the Vegetables:

    • In a large pot, heat olive oil over medium heat. Add the diced onion and garlic and sauté for 2-3 minutes until softened and fragrant.

    • Add the carrots, celery, and zucchini, cooking for an additional 5-7 minutes, stirring occasionally.

  • Add the Pumpkin and Tomatoes:

    • Stir in the pumpkin puree and diced tomatoes, mixing to combine with the sautéed vegetables.

    • Pour in the vegetable broth, followed by the white beans, thyme, turmeric, smoked paprika, cayenne pepper, salt, and pepper. Stir well and bring the soup to a boil.

  • Simmer the Soup:

    • Reduce the heat to low and let the soup simmer for 15-20 minutes to allow the flavors to meld together.

    • If desired, add spinach or kale during the last 5 minutes of cooking, letting it wilt into the soup.

  • Finish the Soup:

    • Taste and adjust seasoning with more salt, pepper, or a splash of apple cider vinegar or lemon juice for a bit of brightness.

  • Ladle the soup into bowls and garnish with fresh parsley or cilantro. Serve with crusty bread for dipping.

Notes

  • To make this soup heartier, add some cooked quinoa, rice, or pasta.

  • If you want a smoother texture, use an immersion blender to blend part of the soup or all of it to your desired consistency.

  • For a more “magical” touch, serve in a cauldron or black bowl and add a swirl of cream for a potion-like appearance.
