Ingredients
Baguette Rounds:
- 1 baguette, sliced into ½-inch rounds
- 2 tablespoons olive oil
Mushroom Mixture:
- 2 tablespoons unsalted butter
- 1 small shallot, finely chopped
- 12 oz mushrooms (cremini or mixed), sliced
- 2 garlic cloves, minced
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
- Salt and freshly ground black pepper, to taste
Additional:
- 6 oz Brie cheese, sliced into thin pieces
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Place baguette slices on a baking sheet, brush with olive oil, and toast for 6–8 minutes until lightly golden.
- In a large skillet, melt butter over medium heat. Add shallot and cook for 2 minutes until softened.
- Add mushrooms and cook for 6–8 minutes until browned and moisture has evaporated. Stir in garlic, thyme, salt, and pepper. Cook 1 more minute.
- Top each toasted baguette slice with a piece of Brie and spoon mushroom mixture over the top.
- Return to oven for 3–5 minutes, just until Brie melts.
- Garnish with fresh parsley and serve warm.
Notes
- Substitute goat cheese or Camembert for Brie if preferred.
- Add a drizzle of balsamic glaze for extra flavor.
- The mushroom mixture can be prepared a few hours ahead and reheated before assembling.
