Description

A simple yet elegant appetizer featuring buttery mushrooms, creamy Brie, and crisp toasted baguette slices. Perfect for dinner parties, holidays, or as a savory snack.


Ingredients

Baguette Rounds:

  • 1 baguette, sliced into ½-inch rounds
  • 2 tablespoons olive oil

Mushroom Mixture:

  • 2 tablespoons unsalted butter
  • 1 small shallot, finely chopped
  • 12 oz mushrooms (cremini or mixed), sliced
  • 2 garlic cloves, minced
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
  • Salt and freshly ground black pepper, to taste

Additional:

  • 6 oz Brie cheese, sliced into thin pieces
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Place baguette slices on a baking sheet, brush with olive oil, and toast for 6–8 minutes until lightly golden.
  2. In a large skillet, melt butter over medium heat. Add shallot and cook for 2 minutes until softened.
  3. Add mushrooms and cook for 6–8 minutes until browned and moisture has evaporated. Stir in garlic, thyme, salt, and pepper. Cook 1 more minute.
  4. Top each toasted baguette slice with a piece of Brie and spoon mushroom mixture over the top.
  5. Return to oven for 3–5 minutes, just until Brie melts.
  6. Garnish with fresh parsley and serve warm.

Notes

  • Substitute goat cheese or Camembert for Brie if preferred.
  • Add a drizzle of balsamic glaze for extra flavor.
  • The mushroom mixture can be prepared a few hours ahead and reheated before assembling.
