Description

Rich, decadent single-serve chocolate cakes with a warm, gooey molten center. Perfect for date nights, Valentine’s Day, or any time you’re craving a restaurant-style dessert at home.

Ingredients

Chocolate Mixture

  • 1/2 cup (1 stick) unsalted butter
  • 4 oz semi-sweet or dark chocolate (baking bars preferred)

Batter

  • 2 large eggs
  • 2 large egg yolks
  • 1/2 cup powdered sugar
  • 1/4 cup all-purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat and Prepare Ramekins: Preheat your oven to 425°F (220°C). Grease 4 ramekins thoroughly and lightly dust them with cocoa powder to prevent sticking and add extra chocolate flavor.
  2. Melt Chocolate and Butter: In a microwave-safe bowl or using a double boiler, melt the butter and chocolate together. Stir continuously until the mixture is smooth and fully combined.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the eggs, egg yolks, powdered sugar, vanilla extract, and a pinch of salt until well combined and slightly thickened.
  4. Combine Mixtures: Pour the melted chocolate and butter mixture into the egg mixture. Gently stir to combine, then fold in the flour until just incorporated to keep the batter light and airy.
  5. Fill Ramekins: Evenly pour the batter into the prepared ramekins, filling each about 3/4 full.
  6. Bake: Place the ramekins in the preheated oven and bake for 11–13 minutes. The edges should be set while the centers remain soft and gooey.
  7. Serve: Let the cakes cool for 1 minute. Then carefully invert each ramekin onto a plate to release the cake. Serve immediately, optionally topped with ice cream or whipped cream for an indulgent experience.

Notes

  • The batter can be prepared ahead of time and refrigerated for up to 1 day to save time on baking day.
  • Use high-quality semi-sweet or dark baking chocolate for the richest flavor and best texture.
  • Enhance presentation by dusting the finished cakes with powdered sugar or drizzling with raspberry sauce.
