Ingredients
Chocolate Mixture
- 1/2 cup (1 stick) unsalted butter
- 4 oz semi-sweet or dark chocolate (baking bars preferred)
Batter
- 2 large eggs
- 2 large egg yolks
- 1/2 cup powdered sugar
- 1/4 cup all-purpose flour
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat and Prepare Ramekins: Preheat your oven to 425°F (220°C). Grease 4 ramekins thoroughly and lightly dust them with cocoa powder to prevent sticking and add extra chocolate flavor.
- Melt Chocolate and Butter: In a microwave-safe bowl or using a double boiler, melt the butter and chocolate together. Stir continuously until the mixture is smooth and fully combined.
- Mix Wet Ingredients: In a separate bowl, whisk together the eggs, egg yolks, powdered sugar, vanilla extract, and a pinch of salt until well combined and slightly thickened.
- Combine Mixtures: Pour the melted chocolate and butter mixture into the egg mixture. Gently stir to combine, then fold in the flour until just incorporated to keep the batter light and airy.
- Fill Ramekins: Evenly pour the batter into the prepared ramekins, filling each about 3/4 full.
- Bake: Place the ramekins in the preheated oven and bake for 11–13 minutes. The edges should be set while the centers remain soft and gooey.
- Serve: Let the cakes cool for 1 minute. Then carefully invert each ramekin onto a plate to release the cake. Serve immediately, optionally topped with ice cream or whipped cream for an indulgent experience.

- The batter can be prepared ahead of time and refrigerated for up to 1 day to save time on baking day.
