Description

Soft, buttery sugar cookies cut into charming heart shapes and sandwiched with fluffy vanilla or strawberry buttercream. These adorable mini cookie sandwiches make the perfect treat for Valentine’s Day parties, gifting, or any sweet occasion.

Ingredients

Sugar Cookies

  • 2¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1½ tsp vanilla extract
  • 2 tbsp milk

Buttercream Filling

  • ½ cup unsalted butter, softened
  • 1½ cups powdered sugar
  • 12 tbsp heavy cream or milk
  • ½ tsp vanilla extract
  • Pink food coloring (optional)

Instructions

  1. Preheat Oven and Prepare Baking Sheets: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper to prevent sticking and ensure even baking.
  2. Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking powder, and salt. This ensures even distribution of leavening and seasoning.
  3. Cream Butter and Sugar: In a separate bowl, cream the softened unsalted butter and granulated sugar together until the mixture is light and fluffy, creating the base for tender cookies.
  4. Add Egg and Vanilla: Beat in the large egg and vanilla extract until fully incorporated for flavor and moisture.
  5. Combine Dry and Wet Ingredients: Gradually add the dry ingredient mixture and milk to the wet ingredients. Mix until a soft dough forms, ensuring not to overmix to keep cookies tender.
  6. Roll Out Dough: Roll the dough on a lightly floured surface to about ¼-inch thickness, making it ideal for uniform cookies that bake evenly.
  7. Cut Heart Shapes: Use a heart-shaped cookie cutter to cut the dough into mini heart shapes and place them neatly on the prepared baking sheets.
  8. Bake Cookies: Bake in the preheated oven for 8–10 minutes, or until the edges are just set. Avoid overbaking to keep the cookies soft.
  9. Cool Cookies: Transfer the cookies to wire racks and cool completely to ensure the buttercream doesn’t melt upon assembly.
  10. Make Buttercream: Beat the softened butter until smooth, then add powdered sugar, vanilla extract, and heavy cream or milk. Beat until fluffy and smooth. Add pink food coloring if desired to tint the frosting.
  11. Assemble Sandwiches: Spread or pipe the buttercream onto half of the cooled cookies, then top with the remaining cookies to create charming mini heart cookie sandwiches.

Notes

  • Do not overbake the cookies to maintain a soft texture.
  • If the dough is sticky, chill it for 20 minutes before rolling out.
  • Store assembled cookie sandwiches in an airtight container for up to 3 days to keep fresh.
  • Cookies by themselves freeze well if you want to store for longer before assembling.
