  • ¼ teaspoon black pepper
  • ½ cup heavy cream (optional, for creaminess)

For the Mini Grilled Cheese:

  • 1 loaf sandwich bread
  • 8 slices cheddar or American cheese
  • 4 tablespoons butter, softened

Instructions

  1. Make the Soup: In a pot, heat olive oil over medium heat. Add onion and garlic; sauté 3–4 minutes until softened. Stir in crushed tomatoes, broth, sugar, basil, salt, and pepper. Simmer 15–20 minutes. Blend soup until smooth. Stir in cream, if using. Keep warm.
  2. Make the Grilled Cheese: Cut bread into small squares or rounds. Butter one side of each piece. Place cheese between two slices, buttered side out, and cook on a skillet until golden brown and cheese is melted, 2–3 minutes per side. Cut into bite-sized pieces.
