Description
Mini Caprese Sandwich Skewers are bite-sized appetizers combining fresh mozzarella, juicy tomatoes, aromatic basil, and a drizzle of balsamic glaze, all served on small pieces of bread. Perfect for parties or a light snack.
Ingredients
- 1 loaf of baguette or ciabatta (cut into small slices)
- 1 cup fresh mozzarella balls (bocconcini or ciliegine)
- 1 grape tomato
- Fresh basil leaves (whole)
- 2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic glaze (or balsamic vinegar reduction)
- Salt and pepper to taste
- 10–12 wooden skewers
Instructions
- Prepare the bread: Slice the baguette or ciabatta into small squares, about 1-inch thick. You should have enough pieces to make 10-12 skewers.
- Assemble the skewers: Start by threading one cherry tomato onto a skewer, followed by a fresh basil leaf, then a mozzarella ball. After that, add a slice of the baguette or ciabatta. Repeat until you have filled the skewer, ending with a tomato or mozzarella ball on top.
- Arrange the skewers: Place the assembled skewers on a serving platter, drizzle with olive oil and balsamic glaze. Season with salt and pepper to taste.
- Serve: Serve immediately as an appetizer, or refrigerate for up to 30 minutes before serving to allow flavors to meld. Drizzle balsamic glaze just before serving to prevent soggy bread.
Notes
- For a vegan version, use vegan mozzarella or skip the cheese.
- Spicy kick: Add red pepper flakes or jalapeños for heat.
- Try whole wheat or gluten-free bread for a healthier option.
