Description

Mini Caprese Sandwich Skewers are bite-sized appetizers combining fresh mozzarella, juicy tomatoes, aromatic basil, and a drizzle of balsamic glaze, all served on small pieces of bread. Perfect for parties or a light snack.


Ingredients

  • 1 loaf of baguette or ciabatta (cut into small slices)
  • 1 cup fresh mozzarella balls (bocconcini or ciliegine)
  • 1 grape tomato
  • Fresh basil leaves (whole)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze (or balsamic vinegar reduction)
  • Salt and pepper to taste
  • 1012 wooden skewers

Instructions

  1. Prepare the bread: Slice the baguette or ciabatta into small squares, about 1-inch thick. You should have enough pieces to make 10-12 skewers.
  2. Assemble the skewers: Start by threading one cherry tomato onto a skewer, followed by a fresh basil leaf, then a mozzarella ball. After that, add a slice of the baguette or ciabatta. Repeat until you have filled the skewer, ending with a tomato or mozzarella ball on top.
  3. Arrange the skewers: Place the assembled skewers on a serving platter, drizzle with olive oil and balsamic glaze. Season with salt and pepper to taste.
  4. Serve: Serve immediately as an appetizer, or refrigerate for up to 30 minutes before serving to allow flavors to meld. Drizzle balsamic glaze just before serving to prevent soggy bread.
