Mediterranean Spinach Feta Crisps are light, crispy, and full of flavor, with a savory spinach and feta filling wrapped in golden puff pastry. Perfect for appetizers, snacks, or a side dish.
Ingredients
- 1 cup frozen spinach, thawed and drained
- 1/2 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 sheet of puff pastry (gluten-free if needed)
- 1 egg (for egg wash)
- Lemon zest (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, combine thawed spinach, feta, Parmesan, olive oil, garlic, oregano, salt, and pepper. Mix well.
- Roll out the puff pastry on a floured surface. Cut into small squares or circles (2-3 inches each).
- Spoon a small amount of spinach filling onto each pastry piece.
- Fold the pastry over the filling to create pockets or triangles. Press edges to seal.
- Brush with egg wash (beaten egg) for a shiny, golden finish.
- Place on a baking sheet and bake for 12–15 minutes until golden and crispy.
- Cool for a few minutes before serving. Garnish with lemon zest if desired.
Notes
- Add chopped kalamata olives for extra Mediterranean flavor.
- Spice them up with red pepper flakes or chopped chili peppers.
- For a different taste, try using goat cheese or ricotta instead of feta.
- Use phyllo dough for a lighter, flakier alternative to puff pastry.
