Description

Mediterranean Spinach Feta Crisps are light, crispy, and full of flavor, with a savory spinach and feta filling wrapped in golden puff pastry. Perfect for appetizers, snacks, or a side dish.


Ingredients

  • 1 cup frozen spinach, thawed and drained
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 sheet of puff pastry (gluten-free if needed)
  • 1 egg (for egg wash)
  • Lemon zest (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, combine thawed spinach, feta, Parmesan, olive oil, garlic, oregano, salt, and pepper. Mix well.
  3. Roll out the puff pastry on a floured surface. Cut into small squares or circles (2-3 inches each).
  4. Spoon a small amount of spinach filling onto each pastry piece.
  5. Fold the pastry over the filling to create pockets or triangles. Press edges to seal.
  6. Brush with egg wash (beaten egg) for a shiny, golden finish.
  7. Place on a baking sheet and bake for 12–15 minutes until golden and crispy.
  8. Cool for a few minutes before serving. Garnish with lemon zest if desired.

Notes

  • Add chopped kalamata olives for extra Mediterranean flavor.
  • Spice them up with red pepper flakes or chopped chili peppers.
  • For a different taste, try using goat cheese or ricotta instead of feta.
