Description

This Mediterranean Cucumber and Tomato Salad is a refreshing dish featuring crunchy cucumbers, juicy cherry tomatoes, creamy mozzarella, and aromatic red onions, all tossed in a zesty balsamic marinade.


Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • Pinch of salt
  • Pinch of pepper
  • 1 cucumber, peeled, fork-scored, and thinly sliced, then diced
  • 1½ cups cherry tomatoes, cut into quarters
  • 8 oz fresh mozzarella, torn into bite-sized pieces
  • ½ large red onion, chopped into small pieces
  • Optional: fresh basil leaves for garnish

Instructions

  1. In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, dried basil, salt, and pepper. Set aside to let the flavors meld.
  2. Peel and fork-score the cucumber, then thinly slice it before dicing. Cut the cherry tomatoes into quarters and chop the red onion into small pieces. Tear the fresh mozzarella into bite-sized chunks.
  3. In a large salad bowl, combine the diced cucumber, cherry tomatoes, fresh mozzarella, and chopped red onion.
  4. Pour the balsamic marinade over the salad and toss gently to coat all the ingredients evenly. Taste and adjust seasoning with additional salt and pepper, if needed.
  5. Garnish the salad with fresh basil leaves, if desired. Serve immediately, or chill for 15-20 minutes in the fridge to allow the flavors to meld together.

Notes

  • For added protein, add grilled chicken, chickpeas, or olives.
  • For a spicy version, add red pepper flakes to the marinade.
  • For a citrus twist, squeeze some lemon juice over the salad before serving.
