Description
This Mediterranean Cucumber and Tomato Salad is a refreshing dish featuring crunchy cucumbers, juicy cherry tomatoes, creamy mozzarella, and aromatic red onions, all tossed in a zesty balsamic marinade.
Ingredients
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- Pinch of salt
- Pinch of pepper
- 1 cucumber, peeled, fork-scored, and thinly sliced, then diced
- 1½ cups cherry tomatoes, cut into quarters
- 8 oz fresh mozzarella, torn into bite-sized pieces
- ½ large red onion, chopped into small pieces
- Optional: fresh basil leaves for garnish
Instructions
- In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, dried basil, salt, and pepper. Set aside to let the flavors meld.
- Peel and fork-score the cucumber, then thinly slice it before dicing. Cut the cherry tomatoes into quarters and chop the red onion into small pieces. Tear the fresh mozzarella into bite-sized chunks.
- In a large salad bowl, combine the diced cucumber, cherry tomatoes, fresh mozzarella, and chopped red onion.
- Pour the balsamic marinade over the salad and toss gently to coat all the ingredients evenly. Taste and adjust seasoning with additional salt and pepper, if needed.
- Garnish the salad with fresh basil leaves, if desired. Serve immediately, or chill for 15-20 minutes in the fridge to allow the flavors to meld together.

- For added protein, add grilled chicken, chickpeas, or olives.
