Ingredients
For the maple muffins:
- 2 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 tbsp sugar
- 1 large egg
- 1 cup buttermilk
- ¼ cup maple syrup
- ¼ cup melted butter
For the filling:
- 6 breakfast sausage patties
- 6 large eggs
- 6 slices American cheese (or cheddar)
- Maple syrup, for drizzling (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
- In another bowl, mix egg, buttermilk, maple syrup, and melted butter.
- Combine wet and dry ingredients until just mixed. Do not overmix.
- Spoon a tablespoon of batter into each muffin cup.
- Add a sausage patty and a piece of cheese, then top with beaten egg (scrambled or baked separately and cut into rounds).
- Cover with remaining batter, spreading to fully enclose the filling.
- Bake for 20–25 minutes, until golden and cooked through.
- Let cool slightly before removing from the tin. Drizzle with maple syrup if desired.
Notes
- You can bake scrambled eggs on a sheet pan and cut into rounds for even layering.
- These freeze well—reheat in the microwave for a quick breakfast.
- Try turkey sausage or beef for variations.
