Ingredients
- 1 lb boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
- 1 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
- 1 cup carrots, diced
- 1 cup celery, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp dried thyme
- ½ tsp red pepper flakes (optional)
- Salt and pepper to taste
- ½ cup grated Parmesan cheese (optional)
- For the garnish (optional): Fresh basil or parsley, chopped

Instructions
- In a large pot, heat olive oil over medium heat. Season chicken with salt and pepper, then cook for 5–7 minutes until golden. Remove chicken and set aside.
- In the same pot, sauté onion, garlic, carrots, and celery for 5 minutes until softened.
- Stir in sun-dried tomatoes, chicken broth, heavy cream, thyme, and red pepper flakes. Bring to a simmer and cook for 10–12 minutes until vegetables are tender.
- Return chicken to the pot and stir to combine. Simmer for 5 more minutes, then stir in Parmesan cheese if using. Adjust seasoning with salt and pepper.
- Serve hot, garnished with fresh basil or parsley and extra Parmesan cheese. Pair with crusty bread or crackers.
