Description

A cozy twist on classic banana bread with warm maple flavor and crunchy pecans. Perfect for breakfast, snacks, or holiday gatherings.


Ingredients

Dry Ingredients:

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon

Wet Ingredients:

  • 3 ripe bananas, mashed (about 1 ½ cups)
  • ½ cup pure maple syrup
  • ½ cup brown sugar, packed
  • ⅓ cup melted butter (or coconut oil)
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup chopped pecans (plus more for topping)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  3. In a large bowl, mix mashed bananas, maple syrup, brown sugar, melted butter, eggs, and vanilla until smooth.
  4. Gently fold dry ingredients into wet mixture until just combined.
  5. Stir in chopped pecans.
  6. Pour batter into prepared loaf pan and sprinkle extra pecans on top.
  7. Bake 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
