Instructions
- Cook Sausage: In a skillet over medium heat, cook the sausage until browned and cooked through. Remove from skillet and set aside, leaving any drippings in the pan.
- Sauté Vegetables: Using the same skillet, add diced bell peppers and chopped onions. Sauté until the vegetables are soft and fragrant, about 5-7 minutes.
- Scramble Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture into the skillet with the sautéed vegetables. Cook over medium heat, stirring gently, until the eggs are fully scrambled and cooked through.
- Combine Filling: Remove the skillet from heat and stir in the cooked sausage or bacon until well combined with the eggs and vegetables.
- Assemble Burritos: Lay out each tortilla on a flat surface. Spoon an even amount of the egg, sausage, and vegetable mixture onto the center of each tortilla. Sprinkle shredded cheese over the filling.
