A delicious low-carb twist on the traditional German Christmas Stollen, crafted with almond flour, mozzarella, and sugar-free marzipan for a moist, rich holiday bread perfect for festive celebrations.

Dough Ingredients

  • 2 cups almond flour
  • 2 cups shredded mozzarella cheese
  • 3 oz cream cheese
  • 1 egg
  • 1/4 cup powdered sweetener
  • 1 tsp vanilla extract
  • 1 tsp orange zest
  • 1 tsp lemon zest
  • 1 tsp baking powder
  • 1/3 cup chopped nuts (almonds or pecans)
  • 1/4 cup sugar-free dried cranberries (optional)

Filling

  • 1/4 cup sugar-free marzipan (rolled into a log)

Finishing

  • 2 tbsp melted butter (for brushing)


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking the stollen evenly.
  2. Melt Cheese: In a microwave-safe bowl or over low heat, melt the shredded mozzarella and cream cheese together until smooth and fully combined, creating a pliable cheese mixture.
  3. Prepare Dry and Wet Ingredients: In a separate bowl, combine almond flour, powdered sweetener, baking powder, orange zest, lemon zest, chopped nuts, and sugar-free dried cranberries if using. Then add the egg and vanilla extract, mixing thoroughly.
  4. Combine Cheese and Flour Mixture: Pour the melted cheese mixture into the dry ingredients and mix well until a uniform dough forms that can be handled easily.
  5. Shape Dough and Add Filling: Flatten the dough gently into a rectangular shape on a parchment-lined baking sheet. Place the rolled sugar-free marzipan log down the center of the rectangle.
  6. Form the Stollen: Fold the edges of the dough over the marzipan to enclose it, shaping the dough into a loaf resembling a traditional stollen.
