- 2 cups almond flour
- 2 cups shredded mozzarella cheese
- 3 oz cream cheese
- 2 eggs
- 1/4 cup powdered sweetener
- 1 tsp vanilla extract
- 1 tsp orange zest
- 1 tsp lemon zest
- 1 tsp baking powder
Toppings
- 1/3 cup sugar-free candied nuts or dried berries (optional)
- 2 tbsp melted butter (for brushing)
Instructions
- Prepare the oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking the bread evenly.
- Melt cheeses: In a microwave-safe bowl, melt the shredded mozzarella and cream cheese together until smooth, stirring occasionally to combine fully.
- Mix dry and wet ingredients: In a separate bowl, combine almond flour, powdered sweetener, baking powder, orange zest, lemon zest, eggs, and vanilla extract thoroughly.
- Combine cheese mixture with dry ingredients: Slowly add the melted cheese mixture to the almond flour mixture, stirring continuously until a uniform dough forms.
- Shape the dough: On a parchment-lined baking sheet, form the dough into a ring shape resembling a traditional Rosca de Reyes.
- Add toppings: Gently press sugar-free candied nuts or dried berries into the dough ring, if using, to decorate and add flavor.
- Brush with butter: Lightly brush the top of the dough ring with melted butter for a golden finish.
- Bake: Place in the preheated oven and bake for 18 to 22 minutes, or until the bread is golden brown and set.
Notes
- Traditionally, a nut or small trinket can be hidden inside the dough before baking for added fun.
- Use rosemary sprigs or sliced almonds as alternative decorations on top for enhanced aroma and texture.
- Serve the bread slightly warm to enjoy the full flavor and soft texture.
