Ingredients

Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Combine Wet Ingredients: In a large bowl, beat the eggs, granulated sugar, and brown sugar together until smooth and slightly fluffy. Add the vegetable oil (or melted butter), vanilla extract, lemon zest, and lemon juice. Mix until combined.
- Fold in Dry Ingredients: Gradually fold in the dry ingredients until just combined.
- Add Zucchini and Nuts: Gently stir in the grated zucchini and nuts, if using.
- Bake: Pour the batter into the loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few crumbs.
- Cool and Serve: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Dust with powdered sugar before slicing and serving, if desired.
Notes
- If you want to make this recipe healthier, you can substitute half of the all-purpose flour with whole wheat flour and use less sugar.
- You can add a glaze made from powdered sugar and lemon juice for an extra touch of sweetness.
