Ingredients
- 2 cups all-purpose flour
- 1½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- Zest of 2 lemons
- ¼ cup fresh lemon juice
- ½ cup sour cream or plain yogurt
- ¼ cup milk
- For the glaze (optional):
- 1 cup powdered sugar
- 2 tbsp fresh lemon juice
- ½ tsp lemon zest
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together butter and sugar for 3–4 minutes until light and fluffy.
- Beat in eggs one at a time, ensuring each is fully incorporated before adding the next.
- Stir in vanilla extract, lemon zest, and lemon juice.
- Alternate adding dry ingredients and wet ingredients (sour cream and milk) in thirds, beginning and ending with the dry ingredients. Mix until just combined.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 55–60 minutes or until a toothpick comes out clean.
- Let the bread cool for 10 minutes in the pan before transferring it to a wire rack to cool completely.
- For the glaze, whisk together powdered sugar, lemon juice, and lemon zest until smooth. Drizzle over the cooled bread.
Notes
- Add blueberries for a fruity twist or swap half of the flour for almond flour for a denser texture.
- Try adding poppy seeds for a lemon poppy seed variation, or infuse a floral note with lavender.
- For a lighter option, swap sour cream with plain Greek yogurt or regular yogurt.
