Description

Lemon Bread is a light, fluffy, and refreshing dessert filled with citrusy goodness. This sweet, tangy bread features a moist crumb and a zesty lemon flavor, topped with a sweet lemon glaze for an extra burst of citrus. Perfect for breakfast, brunch, or as a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 2 lemons
  • ¼ cup fresh lemon juice
  • ½ cup sour cream or plain yogurt
  • ¼ cup milk
  • For the glaze (optional):
  • 1 cup powdered sugar
  • 2 tbsp fresh lemon juice
  • ½ tsp lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together butter and sugar for 3–4 minutes until light and fluffy.
  4. Beat in eggs one at a time, ensuring each is fully incorporated before adding the next.
  5. Stir in vanilla extract, lemon zest, and lemon juice.
  6. Alternate adding dry ingredients and wet ingredients (sour cream and milk) in thirds, beginning and ending with the dry ingredients. Mix until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top. Bake for 55–60 minutes or until a toothpick comes out clean.
  8. Let the bread cool for 10 minutes in the pan before transferring it to a wire rack to cool completely.
  9. For the glaze, whisk together powdered sugar, lemon juice, and lemon zest until smooth. Drizzle over the cooled bread.

Notes

  • Add blueberries for a fruity twist or swap half of the flour for almond flour for a denser texture.
  • Try adding poppy seeds for a lemon poppy seed variation, or infuse a floral note with lavender.
