Description

Korean BBQ Meatballs with Spicy Mayo Dip are a savory and flavorful fusion dish that combines the rich tastes of Korean BBQ with juicy meatballs. Infused with soy sauce, ginger, garlic, and a touch of sweetness from brown sugar, paired with a creamy, spicy mayo dip, this dish is perfect for any occasion.

Ingredients

  • 1 lb ground beef (or ground chicken for a lighter option)
  • 1/2 cup breadcrumbs (preferably panko for extra crunch)
  • 1 egg
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 1/4 cup green onions (chopped)
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil (for frying)
  • For the Spicy Mayo Dip:
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha sauce (adjust for spice level)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon honey (optional, for added sweetness)
  • 1 teaspoon soy sauce
  • For Garnish:
  • 1 tablespoon sesame seeds
  • 1/4 cup chopped green onions

Instructions

  1. In a large mixing bowl, combine the ground beef (or chicken), breadcrumbs, egg, garlic, ginger, soy sauce, sesame oil, brown sugar, green onions, and black pepper. Mix until well combined, but don’t overmix.
  2. Form the mixture into 1 to 1.5-inch meatballs (about 20-24 meatballs) and set them aside.
  3. Heat the vegetable oil in a large skillet over medium heat. Add the meatballs and cook for 5-7 minutes, turning occasionally, until golden brown on all sides and fully cooked through (internal temp 165°F for chicken or 160°F for beef).
  4. For the spicy mayo dip, whisk together the mayonnaise, sriracha sauce, rice vinegar, sesame oil, honey (if using), and soy sauce in a small bowl until smooth. Adjust the heat level with more sriracha if desired.
  5. Once the meatballs are cooked, remove them from the skillet and drain on a paper towel. Serve the meatballs with the spicy mayo dip on the side, garnished with sesame seeds and chopped green onions.
  6. Serve immediately and enjoy!

Notes

  • For extra heat, add more sriracha to the spicy mayo dip or chopped fresh chilies to the meatball mixture.
  • Can substitute the beef with ground turkey or use tofu for a vegetarian version.
  • Try baking the meatballs at 375°F for 15-18 minutes for a healthier option.
