Description

Khachapuri is a traditional Georgian cheese-filled bread known for its soft crust and rich, melty cheese center, topped with a runny egg and butter for a comforting and savory treat.


Ingredients

For the Dough

  • 2½ cups all-purpose flour
  • 1 tsp sugar
  • 1 tsp salt
  • 2¼ tsp instant yeast
  • ¾ cup warm milk
  • 1 tbsp olive oil

For the Filling

  • 1½ cups shredded mozzarella
  • ½ cup crumbled feta cheese
  • 1 egg (plus 1 egg per bread for topping)
  • 1 tbsp butter


Instructions

  1. Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, sugar, salt, and instant yeast thoroughly to prepare the dough base.
  2. Add Wet Ingredients and Knead: Pour in the warm milk and olive oil, then knead the mixture until a smooth and elastic dough forms, ensuring all ingredients are well incorporated.
  3. Let Dough Rise: Cover the dough with a clean cloth or plastic wrap and allow it to rise for about 1 hour, or until it has doubled in size, which helps develop a soft texture.
  4. Preheat Oven: Set your oven to 425°F (220°C) to ensure it is adequately heated for baking the bread.
  5. Shape the Dough: Roll the risen dough into an oval shape, then fold the edges inward to create a boat shape, which will hold the cheese filling during baking.
  6. Prepare Filling and Fill: In a bowl, mix shredded mozzarella, crumbled feta, and 1 egg to create a creamy cheese mixture; spoon this mixture into the center of the dough boat.
  7. Bake initially: Place the filled dough in the oven and bake for 12 to 15 minutes, or until the crust turns golden and the cheese begins to melt and bubble.
  8. Add Topping Egg and Finish Baking: Carefully crack an egg into the center of the cheese filling and bake for an additional 2 to 3 minutes, just until the egg white is set but the yolk remains runny.
  9. Finish and Serve: Remove the khachapuri from the oven, add a tablespoon of butter on top of the hot cheese, and serve immediately, mixing the butter and egg into the cheese before eating for authentic flavor.
