Instructions

- Season and Mix: Stir in the keto-friendly taco seasoning and low-carb salsa into the beef mixture. Remove from heat once blended well.
- Add Dairy Ingredients: Mix in the sour cream and half of the shredded cheddar and Monterey Jack cheeses into the beef mixture until evenly combined.
- Assemble in Baking Dish: Transfer the beef and cheese mixture into the prepared baking dish, spreading evenly.
- Top with Cheese: Sprinkle the remaining shredded cheese on top of the casserole for a gooey, golden finish.
- Bake the Casserole: Place the casserole in the preheated oven and bake uncovered for 20–25 minutes until bubbly and lightly golden on top.
