  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C) and lightly grease a baking dish to prevent sticking.
  2. Sauté Onions: Heat olive oil in a skillet over medium heat. Add diced onion and cook for 3–4 minutes until softened and translucent.
  3. Add Garlic: Stir in minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
  4. Cook Ground Beef: Add the ground beef to the skillet and cook until browned completely. Drain excess fat if necessary to keep the dish lean.
  5. Season and Mix: Stir in the keto-friendly taco seasoning and low-carb salsa into the beef mixture. Remove from heat once blended well.
  6. Add Dairy Ingredients: Mix in the sour cream and half of the shredded cheddar and Monterey Jack cheeses into the beef mixture until evenly combined.
  7. Assemble in Baking Dish: Transfer the beef and cheese mixture into the prepared baking dish, spreading evenly.
  8. Top with Cheese: Sprinkle the remaining shredded cheese on top of the casserole for a gooey, golden finish.
  9. Bake the Casserole: Place the casserole in the preheated oven and bake uncovered for 20–25 minutes until bubbly and lightly golden on top.
