Ingredients

Salad

  • 1 bunch kale, de-stemmed and chopped
  • 1 cup croutons
  • ¼ cup grated Parmesan cheese
  • Optional: lemon wedge, cracked black pepper

Dressing

  • ¼ cup mayonnaise or Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 garlic clove, minced
  • Salt and pepper to taste


Instructions

  1. Make the dressing. In a bowl, whisk together the mayonnaise or Greek yogurt, lemon juice, olive oil, Dijon mustard, Worcestershire sauce, minced garlic, salt, and pepper until smooth and creamy.
  2. Massage the kale. Place the chopped kale in a large bowl and add a small amount of the dressing. Massage the kale gently with your hands for at least 1 minute to soften the leaves and reduce bitterness.
  3. Combine salad ingredients. Add the remaining dressing to the massaged kale along with the grated Parmesan cheese and croutons.
