Ingredients
Salad
- 1 bunch kale, de-stemmed and chopped
- 1 cup croutons
- ¼ cup grated Parmesan cheese
- Optional: lemon wedge, cracked black pepper
Dressing
- ¼ cup mayonnaise or Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- Make the dressing. In a bowl, whisk together the mayonnaise or Greek yogurt, lemon juice, olive oil, Dijon mustard, Worcestershire sauce, minced garlic, salt, and pepper until smooth and creamy.
- Massage the kale. Place the chopped kale in a large bowl and add a small amount of the dressing. Massage the kale gently with your hands for at least 1 minute to soften the leaves and reduce bitterness.
- Combine salad ingredients. Add the remaining dressing to the massaged kale along with the grated Parmesan cheese and croutons.
- Toss and serve. Toss everything together until the kale is evenly coated with dressing, then optionally garnish with a lemon wedge and cracked black pepper. Serve immediately for best freshness.
