Description

Ingredients

  • For the Cake:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained
  • 1/2 cup buttermilk
  • For the Frosting:
  • 1/2 cup unsalted butter, softened
  • 4 ounces cream cheese, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons pineapple juice (optional)
  • For Garnish:
  • Pineapple slices or chunks
  • Maraschino cherries (optional)
  • Toasted coconut flakes (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
  3. In a large bowl, beat softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  4. Mix in drained crushed pineapple. Gradually add dry ingredients alternating with buttermilk, beginning and ending with dry ingredients. Mix until just combined.
  5. Divide batter evenly between prepared pans. Smooth tops and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  6. Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. For frosting, beat butter and cream cheese until smooth. Gradually add powdered sugar, beating until combined. Stir in vanilla and pineapple juice if desired.
  8. Assemble cake by placing one layer on a plate, spreading frosting on top, adding the second layer, and frosting top and sides. Garnish with pineapple, cherries, and toasted coconut if desired.
  9. Serve at room temperature and enjoy.

Notes

  • For extra tropical flavor, fold 1/2 cup shredded coconut into the batter.
  • To make upside-down version, line pan with pineapple rings and brown sugar before pouring batter.
