Ingredients
- For the Cake:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup crushed pineapple, drained
- 1/2 cup buttermilk
- For the Frosting:
- 1/2 cup unsalted butter, softened
- 4 ounces cream cheese, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons pineapple juice (optional)
- For Garnish:
- Pineapple slices or chunks
- Maraschino cherries (optional)
- Toasted coconut flakes (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
- Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
- In a large bowl, beat softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
- Mix in drained crushed pineapple. Gradually add dry ingredients alternating with buttermilk, beginning and ending with dry ingredients. Mix until just combined.
- Divide batter evenly between prepared pans. Smooth tops and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
- For frosting, beat butter and cream cheese until smooth. Gradually add powdered sugar, beating until combined. Stir in vanilla and pineapple juice if desired.
- Assemble cake by placing one layer on a plate, spreading frosting on top, adding the second layer, and frosting top and sides. Garnish with pineapple, cherries, and toasted coconut if desired.
- Serve at room temperature and enjoy.

- For extra tropical flavor, fold 1/2 cup shredded coconut into the batter.
