Description

Italian Stuffed Flank Steak combines the tender, juicy texture of flank steak with a rich, flavorful spinach and ricotta cheese stuffing. Rolled up and baked to perfection, this dish is a delicious and impressive option for any special occasion or family gathering.


Ingredients

  • 1 1/2 pounds flank steak, trimmed
  • 2 tablespoons olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • Kitchen twine (for tying the steak)
  • 1/2 cup marinara sauce (for serving, optional)
  • Fresh basil or parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lay the flank steak flat and gently pound it to an even thickness, about 1/2 inch thick. Slice horizontally if needed to create a thinner piece.
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add chopped spinach and cook for 2-3 minutes, until wilted. Remove from heat and let it cool.
  4. In a bowl, combine ricotta, Parmesan, garlic, oregano, basil, red pepper flakes (if using), salt, and pepper. Stir in the wilted spinach.
  5. Spread the ricotta mixture evenly over the steak, leaving 1 inch around the edges.
  6. Roll the steak tightly around the filling and secure with kitchen twine every 2 inches.
  7. Heat the remaining tablespoon of olive oil in the same skillet over medium-high heat. Sear the rolled steak on all sides for 2-3 minutes until golden brown.
  8. Transfer to a baking dish and bake for 20-25 minutes until the internal temperature reaches 130°F (54°C) for medium-rare or 140°F (60°C) for medium.
  9. Let the steak rest for 10 minutes before removing the twine and slicing into 1-inch thick pieces.
  10. Serve with marinara sauce and garnish with fresh basil or parsley.
