Ingredients
- 2 lbs beef chuck, cut into 2-inch cubes
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 carrots, sliced
- 4 garlic cloves, minced
- 2 tablespoons tomato paste
- 2 cups beef broth
- 1 tablespoon flour
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 oz mushrooms, halved
- Fresh parsley for garnish
Instructions
- Preheat oven to 325°F (160°C).
- Season beef cubes with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat and sear beef in batches until browned. Remove and set aside.
- In the same pot, add onion, carrots, and garlic. Sauté for 5 minutes until softened.
- Stir in tomato paste and flour, cooking for 1–2 minutes.
- Pour in red wine and scrape the bottom of the pot to deglaze. Simmer for 5 minutes.
- Add beef broth, bay leaves, thyme, and seared beef back into the pot. Stir well.
- Cover and transfer to the oven. Cook for 2 1/2 to 3 hours, until beef is fork-tender.
- In the last 30 minutes, stir in mushrooms.
- Remove bay leaves, adjust seasoning, and garnish with fresh parsley before serving.
- Serve with mashed potatoes, rice, or crusty French bread.
