Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil

- 1 cup apple cider (not apple cider vinegar)
- 2 tablespoons Dijon mustard
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1 tablespoon cornstarch
- 2 tablespoons water (for slurry)
Instructions
- Season chicken breasts with salt, pepper, garlic powder, and thyme.
- Heat olive oil in a large skillet over medium heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add apple cider, Dijon mustard, brown sugar, and apple cider vinegar. Stir to combine and bring to a simmer.
- In a small bowl, whisk together cornstarch and water to form a slurry. Add to the skillet and stir until the glaze thickens, about 2–3 minutes.
- Return chicken to the skillet and spoon the glaze over the top. Simmer for another 2–3 minutes to coat the chicken evenly.
- Serve warm with extra glaze spooned over the top.
