Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1 cup apple cider (not apple cider vinegar)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for slurry)

Instructions

  1. Season chicken breasts with salt, pepper, garlic powder, and thyme.
  2. Heat olive oil in a large skillet over medium heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add apple cider, Dijon mustard, brown sugar, and apple cider vinegar. Stir to combine and bring to a simmer.
  4. In a small bowl, whisk together cornstarch and water to form a slurry. Add to the skillet and stir until the glaze thickens, about 2–3 minutes.
  5. Return chicken to the skillet and spoon the glaze over the top. Simmer for another 2–3 minutes to coat the chicken evenly.
  6. Serve warm with extra glaze spooned over the top.
