Description
A rich and hearty Irish beef stew featuring tender beef cubes simmered with potatoes, carrots, and onions in a flavorful beef broth. This comforting classic is perfect for warming up on chilly days and makes a satisfying dinner for the whole family.
Ingredients
Beef and Broth
- 2 lbs stew beef, cubed
- 3 cups beef broth
Vegetables
- 2 cups potatoes, chopped
- 1 cup carrots, sliced
- 1 onion, diced
Other Ingredients
- 1 tbsp olive oil
- Salt & pepper to taste
Instructions
- Brown the beef: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the cubed stew beef and season generously with salt and pepper. Brown the beef on all sides until it develops a rich, deep color, about 5-7 minutes.
- Add broth and vegetables: Pour in the beef broth and add the diced onion, chopped potatoes, and sliced carrots to the pot. Stir everything to combine, ensuring the ingredients are well distributed within the liquid.
- Simmer until tender: Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot with a lid and let it cook for 1 to 1½ hours, or until the beef is fork-tender and the vegetables are cooked through.
- Final seasoning and serve: Taste and adjust salt and pepper as needed. If desired, add fresh thyme during the last 10 minutes of cooking for enhanced flavor. Serve hot with crusty bread on the side for a complete meal.
