Description
Learn how to cook a perfect shell steak with a simple and flavorful method that delivers a beautifully seared crust and a juicy, tender interior.
Ingredients
Steak
- 1–2 shell steaks
Seasoning
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
Optional
- Butter for finishing (about 1 tbsp)
Instructions
- Prep the steak: Pat the shell steak dry with paper towels to remove any excess moisture, then evenly season both sides with salt, pepper, and garlic powder for balanced flavor.
- Heat the skillet: Place a cast iron or heavy skillet over medium-high heat and add the olive oil. Allow the oil to heat until shimmering but not smoking, to ensure a good sear.
- Sear the steak: Add the steak to the hot skillet and cook for 3–4 minutes on one side without moving it to develop a deep, crispy crust. Flip and sear the other side for another 3–4 minutes to achieve medium-rare doneness.
- Add butter and baste: Reduce heat slightly, add a tablespoon of butter to the skillet, and spoon the melted butter over the steak repeatedly to infuse richness and enhance flavor.
- Rest the steak: Remove the steak from the skillet and let it rest on a plate for 5 minutes. This allows the juices to redistribute, ensuring a juicy interior when sliced.
Notes
- Use a cast iron skillet for best crust and even heat distribution.
- Adjust the cooking time based on preferred doneness: less time for rare, more for medium or well done.
- Letting the steak rest is crucial for juicy results.
- Butter basting is optional but adds great flavor and moisture.
