Description

These Honey Soy Chicken Drumsticks are marinated in a sweet and savory sugar-free glaze, then baked until sticky and caramelized. Served alongside fragrant low-carb coconut cauliflower rice, this dish offers a delicious and healthy Asian-inspired meal perfect for a satisfying dinner.

Ingredients

Chicken Drumsticks:

  • 8 chicken drumsticks
  • 1/4 cup soy sauce or coconut aminos
  • 2 tbsp sugar-free honey substitute
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp ground ginger
  • 1 tbsp apple cider vinegar
  • Salt and pepper to taste

Coconut Rice:

  • 3 cups riced cauliflower
  • 1/4 cup coconut milk (full fat)
  • 1 tbsp butter or coconut oil
  • Salt and pepper to taste

Instructions

  1. Prepare Marinade and Marinate Chicken: In a bowl, mix soy sauce, sugar-free honey substitute, minced garlic, ground ginger, apple cider vinegar, olive oil, salt, and pepper until well combined. Place the chicken drumsticks in the marinade, ensuring each piece is coated thoroughly. Cover and refrigerate for at least 30 minutes, or preferably overnight for more flavor infusion.
  2. Preheat Oven: About 10 minutes before baking, preheat your oven to 400°F (200°C) to ensure even cooking and caramelization.
  3. Bake Drumsticks: Arrange the marinated chicken drumsticks on a baking sheet lined with parchment paper or foil for easy cleanup. Bake them for 35 to 40 minutes, flipping or basting halfway through cooking to keep them moist and achieve a sticky glaze.
  4. Cook Coconut Cauliflower Rice: While the chicken bakes, heat butter or coconut oil in a skillet over medium heat. Add the riced cauliflower and sauté for a few minutes until slightly tender. Stir in the coconut milk along with salt and pepper, and continue cooking for 5 to 7 minutes until the cauliflower rice is fluffy and infused with coconut flavor.
  5. Serve: Plate the sticky honey soy chicken drumsticks over a generous bed of warm coconut cauliflower rice. Optionally garnish with sesame seeds or sliced green onions for added texture and visual appeal.

Notes

  • Air fry chicken drumsticks at 375°F for 25 minutes as an alternative cooking method.
  • Add chili flakes to the marinade for a spicy kick.
  • Garnish with toasted sesame seeds or chopped green onions to enhance flavor and presentation.
