Ingredients

Tortillas and Eggs

  • 4 corn tortillas (cut into strips)
  • 4 large eggs
  • 1/4 cup milk

Vegetables and Cheese

  • 1/2 cup diced tomatoes
  • 1/4 cup chopped onion
  • 1/2 cup shredded cheese (cheddar or Mexican blend)

Other Ingredients

  • 2 tablespoons oil or butter
  • Salt and pepper to taste

Instructions

  1. Fry Tortilla Strips: Heat the oil or butter in a skillet over medium heat. Add the tortilla strips and fry them until they become crispy and golden brown. Once done, remove them from the pan and set aside.
  2. Sauté Vegetables: In the same skillet, add the chopped onions and diced tomatoes. Cook them, stirring occasionally, until they soften and release their juices, about 3 to 4 minutes.
  3. Prepare Egg Mixture: While the vegetables cook, whisk together the eggs, milk, salt, and pepper in a bowl until fully combined and slightly frothy.
  4. Scramble the Eggs: Pour the egg mixture into the skillet with the softened onions and tomatoes. Gently scramble the eggs by stirring slowly and continuously to get soft curds.
  5. Combine Tortillas and Cheese: When the eggs are about halfway cooked but still moist, add the crispy tortilla strips and shredded cheese to the skillet. Stir together carefully to incorporate everything evenly.
  6. Finish Cooking: Continue cooking until the eggs are fully set and the cheese has melted, about 2 to 3 minutes. Make sure not to overcook to keep the eggs tender.
