Description

A festive roast beef centerpiece paired with a sweet-tart cranberry balsamic glaze — elegant, flavorful, and perfect for holiday gatherings.

Ingredients

For the Roast Beef

  • 3 lb beef roast (top sirloin or rib roast)
  • 2 tbsp olive oil
  • Salt and pepper, to taste

For the Cranberry Balsamic Sauce

  • 1 cup fresh or frozen cranberries
  • ¼ cup balsamic vinegar
  • ¼ cup brown sugar
  • 1 tbsp Dijon mustard

Instructions

  1. Prepare the oven and beef: Preheat your oven to 375°F (190°C). Rub the beef roast all over with olive oil, then season generously with salt and pepper to enhance flavor and create a nice crust.
  2. Roast the beef: Place the beef on a rack in a roasting pan and roast it in the preheated oven for about 1 hour, or until the internal temperature reaches 135°F (57°C) for medium-rare doneness. Use a meat thermometer to check the temperature accurately.
  3. Make the cranberry balsamic sauce: While the beef is roasting, combine the cranberries, balsamic vinegar, brown sugar, and Dijon mustard in a small saucepan over medium heat. Simmer the mixture for about 10 minutes, stirring occasionally, until the cranberries burst and the sauce thickens into a glossy glaze.
  4. Rest and slice the beef: Once the roast is done, remove it from the oven and let it rest for 15 minutes. This allows the juices to redistribute, ensuring a tender and juicy roast.
  5. Serve with glaze: Slice the beef against the grain into desired thickness. Drizzle generously with the warm cranberry balsamic glaze and serve immediately, pairing well with mashed potatoes or roasted vegetables.

Notes

  • Let the roast rest 15 minutes before slicing to retain juices.
  • Pairs beautifully with mashed potatoes or roasted vegetables for a complete holiday meal.
