Description

Elegant and tender beef tenderloin coated in fresh herbs, garlic, and olive oil — perfect for special occasions and holiday dinners. This herb-crusted beef tenderloin delivers a flavorful crust with juicy, medium-rare meat inside, ideal for impressing guests at your next celebration.

Ingredients

Beef Tenderloin

  • 23 lb beef tenderloin

Herb Crust

  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp minced garlic
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough for roasting the beef tenderloin to perfection.
  2. Prepare Beef: Rub the entire surface of the beef tenderloin with olive oil, then evenly coat it with minced garlic, chopped rosemary, thyme, salt, and freshly ground black pepper to build a flavorful herb crust.
  3. Roast Beef: Place the seasoned beef tenderloin on a roasting pan or rack and roast it in the oven for 25 to 30 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare doneness.
  4. Rest Meat: Remove the beef from the oven and let it rest, loosely covered with foil, for 10 minutes. Resting allows the juices to redistribute for a moist and tender finish.
  5. Slice and Serve: Slice the beef tenderloin into thick medallions and serve immediately, optionally accompanied by creamy horseradish sauce for added flavor.

Notes

  • Tie the tenderloin with kitchen twine before roasting to ensure even cooking and maintain its shape.
  • For an extra flavorful touch, serve with creamy horseradish sauce or your favorite dipping sauce.
  • Use a meat thermometer to accurately check the internal temperature for precise cooking.
  • Letting the beef rest after roasting is essential to keep the meat juicy.
