A hearty one-pan breakfast skillet featuring crispy golden potatoes, savory sausage or bacon, sautéed onions and bell peppers, topped with melted cheddar cheese and perfectly cooked eggs. This easy-to-make dish is perfect for a filling weekend breakfast with minimal cleanup.

Instructions
- Cook the potatoes: Heat 2 tablespoons of oil or butter in a large skillet over medium heat. Add the diced potatoes and cook, stirring occasionally, until they are crisp and golden brown, about 10–12 minutes.
- Add vegetables and meat: Stir in the chopped onion, bell pepper, and cooked sausage or bacon. Continue cooking for another 5–7 minutes until the vegetables are tender and the meat is heated through.
- Create wells and add eggs: Using a spoon, make small wells in the potato and vegetable mixture. Crack one egg into each well, spacing them evenly across the skillet.
- Cook the eggs: Cover the skillet with a lid and cook over low to medium heat until the eggs are set to your preference. This usually takes about 4–7 minutes depending on how runny or firm you like the yolks.
- Add cheese and melt: Sprinkle the shredded cheddar evenly over the top of the skillet. Cover again and let the cheese melt for 1–2 minutes.
- Garnish and serve: Remove from heat, garnish with freshly chopped parsley or green onions, and serve hot.
Notes
- Sweet potatoes can be substituted for regular potatoes for a different flavor and texture.
- Add sautéed spinach, mushrooms, or jalapeños for extra veggies and spice.
- For runny eggs, remove the skillet from heat after 4–5 minutes of cooking the eggs and cover to finish cooking with residual heat.
