Ingredients

Pasta:

  • 1 lb rigatoni pasta

Beef:

  • 2 tbsp olive oil
  • 1.5 lbs beef chuck (cut into 1-inch cubes)

Sauce:

  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp crushed red pepper flakes (optional)
  • Salt and pepper, to taste

Additional:

  • ½ cup grated Parmesan cheese (plus extra for serving)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large Dutch oven or deep skillet. Sear beef cubes until browned, then set aside.
  2. Sauté onion until soft, add garlic, and cook briefly.
  3. Add tomato paste, then combine crushed tomatoes, beef broth, herbs, red pepper, salt, and pepper.
  4. Return beef to pot, cover, and simmer for 1.5–2 hours until tender.
  5. Cook pasta separately, then add to sauce.
  6. Stir in Parmesan, garnish with parsley, and serve.

  • Can be made ahead—flavors develop more after resting overnight.
