Ingredients
Pasta:
- 1 lb rigatoni pasta
Beef:
- 2 tbsp olive oil
- 1.5 lbs beef chuck (cut into 1-inch cubes)
Sauce:
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp crushed red pepper flakes (optional)
- Salt and pepper, to taste
Additional:
- ½ cup grated Parmesan cheese (plus extra for serving)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large Dutch oven or deep skillet. Sear beef cubes until browned, then set aside.
- Sauté onion until soft, add garlic, and cook briefly.
- Add tomato paste, then combine crushed tomatoes, beef broth, herbs, red pepper, salt, and pepper.
- Return beef to pot, cover, and simmer for 1.5–2 hours until tender.
- Cook pasta separately, then add to sauce.
- Stir in Parmesan, garnish with parsley, and serve.
Notes
- Can be made ahead—flavors develop more after resting overnight.
- Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
