Ingredients
- 1 pound (500g) lean ground beef
- 1 small onion, chopped
- 4–5 cloves garlic, minced
- 4 cups (946ml) beef or chicken broth or stock
- 1 (15 oz) (432g) can corn, drained
- 1 (15 oz) (425g) can black beans, drained and rinsed
- 1 (15 oz) (425g) can chili beans in chili sauce
- 1 (28 oz) (793g) can crushed tomatoes
- 1 (4 oz) (113g) can chopped green chiles
- 1 tablespoon chili powder
- 2 teaspoons cumin
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Salt, pepper, and cayenne pepper to taste
- Optional toppings: shredded cheese, sour cream, diced avocado, chopped green onions, tortilla chips, fresh cilantro
Instructions
- In a large pot or Dutch oven, heat a bit of olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat.
- Add the chopped onion and sauté for about 3-4 minutes until soft. Add the garlic and cook for another minute until fragrant.
- Stir in the beef broth, corn, black beans, chili beans in chili sauce, crushed tomatoes, and green chiles. Stir well to combine.
- Add the chili powder, cumin, oregano, onion powder, garlic powder, salt, pepper, and cayenne pepper. Stir again and bring to a simmer. Cook uncovered for 20-25 minutes, letting the flavors meld and the soup thicken.
- Taste the soup and adjust seasoning if needed. Add more salt, pepper, or cayenne for desired heat.
- Ladle the soup into bowls and top with your choice of shredded cheese, sour cream, diced avocado, chopped green onions, tortilla chips, and fresh cilantro.
Notes
- Vegetarian Version: Skip the ground beef and use a variety of beans like pinto, kidney, or white beans for a hearty soup.
- Spicy Option: Add more cayenne pepper, chili powder, or fresh diced jalapeños for extra heat.
- If you prefer a thicker soup, mash some of the beans or add cornstarch mixed with water.
- This soup is great to make ahead and stores well in the fridge for up to 4 days.
- If using ground turkey instead of beef, the soup will be leaner but still flavorful.
