- 1 lb Italian turkey sausage
Vegetables & Aromatics
- 1 onion, diced
- 3 cloves garlic, minced
- 3 cups diced potatoes
- 2 cups kale, chopped
Liquids & Seasoning
- 1 Tbsp olive oil
- 4 cups chicken broth
- 1 cup milk or light cream
- ½ tsp crushed red pepper (optional)
- Salt & pepper, to taste
Instructions
- Brown Sausage: Heat olive oil in a large pot over medium heat, add Italian turkey sausage and cook until browned and cooked through, about 5-7 minutes. Remove sausage from the pot and set aside.
- Sauté Aromatics: In the same pot, add diced onion and minced garlic. Sauté for 3-4 minutes until softened and fragrant.
- Add Potatoes and Broth: Add the diced potatoes to the pot, pour in the chicken broth, then bring to a simmer. Cook uncovered for 10–12 minutes until potatoes are tender.
- Combine Ingredients and Kale: Return the browned turkey sausage to the pot. Stir in the chopped kale and pour in the milk or light cream.
- Simmer and Season: Let the soup simmer gently for an additional 5 minutes to meld the flavors and soften the kale. Season with crushed red pepper, salt, and pepper to taste before serving.

- For a dairy-free version, substitute the milk or cream with coconut milk.
- Adjust crushed red pepper based on your preferred heat level or omit for no spice.
- Use turkey sausage for a leaner alternative; Italian pork sausage can be used for a richer flavor.
