Description

A healthier take on the classic Italian Zuppa Toscana, this soup features lean Italian turkey sausage, nutrient-rich kale, and tender potatoes simmered in a creamy broth. It’s comforting and flavorful while keeping the calories and fat in check.


Ingredients

Meat

  • 1 lb Italian turkey sausage

Vegetables & Aromatics

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 cups diced potatoes
  • 2 cups kale, chopped

Liquids & Seasoning

  • 1 Tbsp olive oil
  • 4 cups chicken broth
  • 1 cup milk or light cream
  • ½ tsp crushed red pepper (optional)
  • Salt & pepper, to taste


Instructions

  1. Brown Sausage: Heat olive oil in a large pot over medium heat, add Italian turkey sausage and cook until browned and cooked through, about 5-7 minutes. Remove sausage from the pot and set aside.
  2. Sauté Aromatics: In the same pot, add diced onion and minced garlic. Sauté for 3-4 minutes until softened and fragrant.
  3. Add Potatoes and Broth: Add the diced potatoes to the pot, pour in the chicken broth, then bring to a simmer. Cook uncovered for 10–12 minutes until potatoes are tender.
  4. Combine Ingredients and Kale: Return the browned turkey sausage to the pot. Stir in the chopped kale and pour in the milk or light cream.
  5. Simmer and Season: Let the soup simmer gently for an additional 5 minutes to meld the flavors and soften the kale. Season with crushed red pepper, salt, and pepper to taste before serving.

  • For a dairy-free version, substitute the milk or cream with coconut milk.
  • Adjust crushed red pepper based on your preferred heat level or omit for no spice.
  • Use turkey sausage for a leaner alternative; Italian pork sausage can be used for a richer flavor.
