Ingredients

Grilled Pork

  • 1 lb pork tenderloin or pork chops
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika

Salad

  • 2 large cucumbers, sliced
  • 2 cups mixed greens or arugula
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp fresh parsley or dill, chopped

Dressing

  • 3 tbsp olive oil
  • 1 tbsp lemon juice or red wine vinegar
  • 1 tsp Dijon mustard
  • Salt and black pepper, to taste


Instructions

  1. Preheat the Grill: Preheat your grill to medium-high heat to prepare for cooking the pork evenly and to get a nice sear.
  2. Prepare the Pork: Rub the pork tenderloin or chops with olive oil, garlic powder, salt, black pepper, and smoked paprika ensuring it is evenly coated to infuse flavor.
  3. Grill the Pork: Place the pork on the grill and cook for 4–5 minutes per side, or until the internal temperature reaches 145°F (63°C) indicating it is safely cooked and juicy.
  4. Rest and Slice: Remove the pork from the grill and let it rest for 5 minutes to allow juices to redistribute, then slice it thinly for the salad.
  5. Mix the Salad: In a large bowl, combine sliced cucumbers, mixed greens or arugula, thinly sliced red onion, and chopped fresh parsley or dill to create a refreshing base for the salad.
  6. Prepare the Dressing: Whisk together olive oil, lemon juice or red wine vinegar, Dijon mustard, salt, and black pepper in a small bowl until emulsified and well blended.
  7. Assemble the Salad: Add the sliced grilled pork to the salad bowl, drizzle with the prepared dressing, then toss gently to coat all ingredients evenly and serve immediately for the best freshness.
