Description

A creative twist on the classic Chinese-American dish, this soup combines tender chicken, vegetables, noodles, and a sweet-spicy-savory broth inspired by General Tso’s sauce. Comforting, flavorful, and perfect for weeknights!


Ingredients

For the Soup:

  • 2 tbsp vegetable oil
  • 1 lb boneless, skinless chicken thighs (or breasts), cut into bite-size pieces
  • 1 tbsp cornstarch
  • Salt and pepper, to taste
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 red bell pepper, sliced
  • 4 cups chicken broth
  • 2 cups water
  • 2 cups broccoli florets
  • 2 cups cooked rice noodles (or egg noodles)

For the General Tso’s Sauce:

  • ¼ cup low-sodium soy sauce
  • 3 tbsp rice vinegar
  • 3 tbsp hoisin sauce
  • 2 tbsp brown sugar (or honey)
  • 2 tbsp tomato paste (or ketchup)
  • 12 tsp chili paste (like sambal oelek), to taste
  • 1 tsp cornstarch mixed with 2 tbsp water (slurry)

For Garnish:

  • Sliced green onions
  • Sesame seeds

Instructions

  1. Toss chicken pieces with cornstarch, salt, and pepper. In a large pot, heat oil over medium heat and sear chicken until lightly golden (not fully cooked). Remove and set aside.
  2. In the same pot, sauté onion, garlic, and ginger until fragrant. Add bell pepper and cook 2–3 minutes.
  3. Add chicken broth, water, and broccoli. Bring to a simmer.
  4. Stir in soy sauce, rice vinegar, hoisin, brown sugar, tomato paste, and chili paste. Simmer for 10 minutes.
  5. Return chicken to the pot. Stir in noodles and cook until heated through.
  6. Add cornstarch slurry to thicken slightly, stirring until soup has a glossy finish.
  7. Serve hot, garnished with green onions and sesame seeds.

Notes

  • Adjust heat level by increasing or reducing chili paste.
  • For a lighter version, skip the noodles and serve over steamed rice.
  • Add mushrooms, snap peas, or baby corn for extra veggies.
  • Can be made gluten-free by using tamari instead of soy sauce and gluten-free noodles.
