Description
A creative twist on the classic Chinese-American dish, this soup combines tender chicken, vegetables, noodles, and a sweet-spicy-savory broth inspired by General Tso’s sauce. Comforting, flavorful, and perfect for weeknights!
Ingredients
For the Soup:
- 2 tbsp vegetable oil
- 1 lb boneless, skinless chicken thighs (or breasts), cut into bite-size pieces
- 1 tbsp cornstarch
- Salt and pepper, to taste
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 red bell pepper, sliced
- 4 cups chicken broth
- 2 cups water
- 2 cups broccoli florets
- 2 cups cooked rice noodles (or egg noodles)
For the General Tso’s Sauce:
- ¼ cup low-sodium soy sauce
- 3 tbsp rice vinegar
- 3 tbsp hoisin sauce
- 2 tbsp brown sugar (or honey)
- 2 tbsp tomato paste (or ketchup)
- 1–2 tsp chili paste (like sambal oelek), to taste
- 1 tsp cornstarch mixed with 2 tbsp water (slurry)
For Garnish:
- Sliced green onions
- Sesame seeds
Instructions
- Toss chicken pieces with cornstarch, salt, and pepper. In a large pot, heat oil over medium heat and sear chicken until lightly golden (not fully cooked). Remove and set aside.
- In the same pot, sauté onion, garlic, and ginger until fragrant. Add bell pepper and cook 2–3 minutes.
- Add chicken broth, water, and broccoli. Bring to a simmer.
- Stir in soy sauce, rice vinegar, hoisin, brown sugar, tomato paste, and chili paste. Simmer for 10 minutes.
- Return chicken to the pot. Stir in noodles and cook until heated through.
- Add cornstarch slurry to thicken slightly, stirring until soup has a glossy finish.
- Serve hot, garnished with green onions and sesame seeds.
Notes
- Adjust heat level by increasing or reducing chili paste.
- For a lighter version, skip the noodles and serve over steamed rice.
- Add mushrooms, snap peas, or baby corn for extra veggies.
- Can be made gluten-free by using tamari instead of soy sauce and gluten-free noodles.
