Ingredients
Steak
- 1 lb sirloin or ribeye steak, sliced against the grain
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 1 tbsp olive oil
Pasta
- 12 oz pasta (fettuccine, penne, or linguine)
- Salt, for pasta water
Garlic Butter Sauce
- 4 tbsp unsalted butter
- 6 cloves garlic, minced
- ½ cup beef broth
- ½ cup heavy cream
- ½ cup grated Parmesan cheese
- ½ tsp Italian seasoning
- ¼ tsp red pepper flakes (optional)
- ½ cup reserved pasta water (as needed)
Garnish (optional)
- Fresh parsley
- Extra Parmesan
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente. Reserve ½ cup of the pasta water before draining the pasta.
- Season Steak: Pat the sliced sirloin or ribeye steak dry and season evenly with salt, black pepper, and paprika.
- Sear Steak: Heat olive oil in a large skillet over medium-high heat. Add the steak slices and sear for 2 to 3 minutes per side until nicely browned. Remove the steak from the skillet and set aside.
- Make Garlic Butter Sauce: Reduce heat to medium and add the unsalted butter to the same skillet. Stir in the minced garlic and sauté for about 30 seconds until fragrant.
- Simmer Sauce: Pour in the beef broth and let it simmer for 2 minutes to reduce slightly. Then add heavy cream, grated Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Simmer the mixture for 3 to 4 minutes until it thickens slightly.
- Toss Pasta in Sauce: Add the cooked pasta to the skillet and toss well to coat it in the creamy garlic butter sauce. Add the reserved pasta water a little at a time to loosen the sauce to your desired consistency.
- Combine Steak and Pasta: Return the seared steak slices to the skillet and gently toss everything together to combine and heat through.
- Garnish and Serve: Sprinkle fresh parsley and extra Parmesan cheese over the top if desired. Serve immediately while warm and enjoy.
Notes
- Use freshly grated Parmesan for the smoothest and most flavorful sauce.
- Ribeye gives the richest flavor due to its marbling; sirloin is leaner and a healthier option.
- Add mushrooms or spinach to the skillet for extra texture and nutrition.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently on the stovetop.
