Ingredients

  • 1.5 pounds beef stew meat, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon salt (or to taste)
  • 0.25 teaspoon black pepper
  • 0.25 cup beef broth
  • 1 tablespoon olive oil

Instructions

  1. Prepare the beef stew meat and baby potatoes. Halve the potatoes for even cooking.
  2. In a large skillet, heat olive oil over medium heat. Add the halved potatoes and cook for 8-10 minutes until golden and crispy. Remove from the skillet and set aside.
  3. In the same skillet, add beef stew meat and sear for 6-8 minutes until browned. Remove the beef and set aside.
  4. For the garlic butter sauce, melt butter in the same skillet. Add garlic, onion powder, smoked paprika, thyme, and rosemary. Sauté for 1-2 minutes until fragrant.
  5. Return beef and potatoes to the skillet, pour in beef broth, and stir to coat in the garlic butter sauce. Season with salt and pepper.
  6. Reduce heat to low, cover, and simmer for 5-7 minutes, until beef is tender and potatoes are soft. If needed, cook uncovered for a thicker sauce.
  7. Serve hot, garnished with parsley or additional herbs.
