Ingredients

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking dish or baking tray with parchment paper.
  2. In a microwave-safe bowl, melt the dark chocolate in short bursts of 20-30 seconds, stirring in between, until fully melted and smooth.
  3. In a mixing bowl, combine the melted chocolate, butter, demerara sugar, and caster sugar. Whisk until smooth. Add the eggs one at a time, beating after each addition. Sift in the plain flour and cocoa powder, and mix until the batter is fully combined. The texture should be thick and fudgy.
  4. In another bowl, cream together the butter, sugars, and vanilla extract. Gradually add the flour and cocoa powder, mixing until just combined. Stir in the chocolate chips.
  5. Spoon the brownie batter into the bottom of the prepared pan, spreading it evenly. Then, dollop spoonfuls of cookie dough on top of the brownie batter. Using a knife or skewer, swirl the two batters together to create a marbled effect.
  6. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out mostly clean with just a few crumbs sticking to it. The Browkies should be set around the edges but still slightly gooey in the center.
  7. Let the Browkies cool in the pan for about 10 minutes before transferring them to a wire rack. Once completely cooled, cut into squares or bars and serve.
