Instructions
- Preheat your oven to 350°F (175°C) and line a baking dish or baking tray with parchment paper.
- In a microwave-safe bowl, melt the dark chocolate in short bursts of 20-30 seconds, stirring in between, until fully melted and smooth.
- In a mixing bowl, combine the melted chocolate, butter, demerara sugar, and caster sugar. Whisk until smooth. Add the eggs one at a time, beating after each addition. Sift in the plain flour and cocoa powder, and mix until the batter is fully combined. The texture should be thick and fudgy.
- In another bowl, cream together the butter, sugars, and vanilla extract. Gradually add the flour and cocoa powder, mixing until just combined. Stir in the chocolate chips.
- Spoon the brownie batter into the bottom of the prepared pan, spreading it evenly. Then, dollop spoonfuls of cookie dough on top of the brownie batter. Using a knife or skewer, swirl the two batters together to create a marbled effect.
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out mostly clean with just a few crumbs sticking to it. The Browkies should be set around the edges but still slightly gooey in the center.
- Let the Browkies cool in the pan for about 10 minutes before transferring them to a wire rack. Once completely cooled, cut into squares or bars and serve.
