Description

French Onion Soup Rice is a comforting dish that combines the caramelized flavors of French onion soup with creamy, cheesy rice, creating a perfect blend of savory, sweet, and hearty textures.

Ingredients

  • For the Crust:
  • 2 tablespoons unsalted butter
  • 2 medium onions (thinly sliced)
  • 1 tablespoon olive oil
  • 1 cup long-grain white rice (or Arborio for a creamier texture)
  • 2 cups low-sodium beef broth (or vegetable broth for a vegetarian version)
  • 1/4 cup grated Parmesan cheese
  • 1 cup shredded Gruyère or Swiss cheese (for melting)
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • Salt and pepper to taste
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Caramelize the onions: Heat butter and olive oil in a large skillet over medium-low heat. Add sliced onions and cook, stirring occasionally, for 20-25 minutes until soft and golden brown. Stir in thyme, salt, and pepper, and continue cooking until deeply caramelized.
  2. Cook the rice: While the onions are caramelizing, rinse the rice under cold water. In a separate saucepan, bring beef or vegetable broth to a simmer. Add rice and cook according to package instructions (usually 15-18 minutes), until fully cooked and liquid is absorbed.
  3. Combine onions and rice: Add the cooked rice to the skillet with the onions, gently stirring to combine. If too dry, add extra broth to moisten.
  4. Add cheese: Stir in grated Parmesan cheese and let it melt into the rice.
  5. Melt the cheese: Top the rice with shredded Gruyère or Swiss cheese. Cover the skillet with a lid and let cheese melt for 2-3 minutes until gooey and bubbly.
  6. Serve: Garnish with fresh parsley and serve immediately as a side dish or main course.

Notes

  • Add sautéed mushrooms, spinach, or bell peppers to enhance flavor and nutrition.
  • For a creamier version, stir in a little heavy cream or crème fraîche after adding the cheese.
  • This dish pairs well with grilled meats or can be served as a standalone vegetarian dish.
