The result is a fall-apart tender roast perfect for comforting dinners that require minimal hands-on time but deliver maximum flavor.
Ingredients
Beef Roast
- 3 lb beef chuck roast
Onions and Aromatics
- 2 large onions, sliced
- 2 tbsp butter or oil
- 1 packet onion soup mix
- 1 tbsp Worcestershire sauce
Liquid
- 3 cups beef broth
Instructions
- Sear the Roast: Heat butter or oil in a skillet over medium-high heat and sear the beef chuck roast on all sides until it develops a rich brown crust. This step locks in flavor and gives the meat a beautiful caramelized finish.
- Prepare the Crockpot: Place the sliced onions at the bottom of the slow cooker, spreading them evenly to create a flavorful bed for the roast.
- Combine Ingredients: Place the seared roast on top of the onions. Pour in the beef broth, sprinkle the onion soup mix over the roast, and add the Worcestershire sauce to the liquid for depth of flavor.
- Slow Cook: Cover and cook on Low for 8 hours, or until the beef is fork-tender and easily shredded.
- Serve: Once done, remove the roast and slice or shred as preferred. Serve with the rich onion broth and cooked onions from the crockpot.
Notes
- Add carrots or potatoes along with the onions to make this a hearty one-pot meal.
- Leftover roast can be shredded to make delicious sandwiches the next day.
- For an even deeper onion flavor, caramelize the onions in the skillet before adding them to the crockpot.
- Adjust cooking time based on the size of the roast; larger cuts may need more time.
